Instead of flipping the cake over on the towel that’s covered with cocoa and blowingcocoa everywhere …
Wouldn’t it be better to sift the cocoa onto the cake then put the towel over the cake. Then gently put the edges of the towel over each end of the cake pan and gently flip it over then lay it onto the counter.
This way you won’t have cocoa dust all over your kitchen.

Don’t think you mentioned it, but I roll in parchment since any detergent or fabric softener on your towels will leach into the cake. It is painful to find this out after it is completely made.

I make a German Chocolate roll up cake and the one thing I do differently than you is that I do not powder my towel. As soon as the cake comes out of the oven, I powder the cake, place the towel over it, (confidently) flip it onto my working space and proceed to roll it like you do. For me, it seems to create less of a dusting mess and in the end, it comes out the same!
