Crockpot Chicken Pot Pie (without the pie)
Ingredients:
1 lb. boneless skinless chicken thighs
1 cup brown rice
1 can whole fat coconut milk
6 cups frozen mixed vegetables
4 cups chicken broth
2 tablespoons garlic powder, basil & smoked paprika
2 teaspoons thyme
salt and pepper to taste.
Combine all ingredients in the crockpot and cook on low for six hours. Shred chicken apart with fork. Serve with home biscuit
Homemade Gluten Free Biscuits
Ingredients:
2 cups almond flour
1 3/4 cup garbanzo bean flour
1/4 cup arrow root flour
1 tablespoon baking powder
1 teaspoon salt
12 stick butter
8 tablespoons milk
Combine all of the dry ingredients. Cut butter slices into the mixture with a pastry cutter or fork. Add milk and stir. It will slowly combine to form a ball. Add more milk if it’s too dry.
Once you’ve formed into a ball, pinch off a hand sized amount and place in a greased cast iron skillet. Flaten with hand. Cook in preheated oven for 20 or until done.
Taco/Chili Meat
Brown 2 pounds of hamburger
2 tablespoons paprika
2 tablespoons garlic powder
1/2 tablespoon cumin
1 tablespoon chili powder
1 teaspoon pepper flakes
salt and pepper to taste
Chili
Ingredients:
2 cans black beans
2 cans kidney or pinto beans
1 pound of the seasoned hamburger meat
1 12-16 ounce jar of mild salsa
1 tablespoon garlic powder
1 tablespoon paprika
2 teaspoons cumin
salt and pepper to taste
