1 cup (225g) unsalted butter, cut into 1/2-inch (1.3cm) chunks
12 ounces (340g) semisweet or bittersweet chocolate
3 1/4 cups (415g) all-purpose flour
1 1/4 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon fine sea salt
1 1/2 cups (320g) packed light brown sugar
1/2 cup (100g) granulated sugar
2 large eggs
2 teaspoons vanilla extract
Flaky sea salt, for sprinkling (optional)

IDK about evrryone else but for years I have added my chopped chocs into the flour mixture first, give them one or two round of mixing, then only add that into the wet mixture. Easier to mix the chocs more evenly and less doogh mixing invloved altogether in the end.
I have to say, I am always surprised when people crack eggs over the bowl with ingredients. Clearly they* have never dealt with pieces of shell or the horror of a bad egg! *looking at you, Kristin
But I’ll definitely try this recipe.

Hmmm weird, I have never used soften butter for cookies. I am so used to using grated butter for making biscuts that I grated the butter for cookies. I use the cold eggs too.

America’s Test Kitchen’s recipe has used melted butter for a long time.
On the podcast regarding this recipe, I think I heard Tara say that her favorite riff on this is an oatmeal version… Did I hear that correctly? Can you give the specifics of that riff?

Beat the eggs in a separate bowl then add to the chocolate mixture.
