12 ounces (340g) semisweet or bittersweet chocolate
3 1/4 cups (415g) all-purpose flour
1 1/4 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon fine sea salt
1 1/2 cups (320g) packed light brown sugar
1/2 cup (100g) granulated sugar
2 large eggs
2 teaspoons vanilla extract
Flaky sea salt, for sprinkling (optional)

  6. IDK about evrryone else but for years I have added my chopped chocs into the flour mixture first, give them one or two round of mixing, then only add that into the wet mixture. Easier to mix the chocs more evenly and less doogh mixing invloved altogether in the end.

  9. Hmmm weird, I have never used soften butter for cookies. I am so used to using grated butter for making biscuts that I grated the butter for cookies. I use the cold eggs too.
