Simple Toor/Tuvar Dal with Drumsticks

Ingredients
-1 cup toor dal/lentils
-3 cups water
-1 small tomato cut int cubes
-1/2 onion chopped
-4 green chilies slit
-6 garlic finely chopped
-1” ginger crushed
-2 tbsp fresh coriander leaves chopped
-pinch asafoetida
-1/2 tsp turmeric powder
-salt to taste

-Wash several times till water run clear.
-Now add to the pressure cooker toor dal soak toor dal for 1 hour by adding tomato, green chillies, onion, ginger, garlic, coriander leaves, turmeric, salt, asafoetida, 3 cups of water
-After 1 hour pressure cook toor dal for 2 whistles till dal cooked & soft
-Do not open the lid allow pressure to reduce naturally
-once the pressure settles down open the lid and stir, if the dal looks thick add very little water, keep the toor dal slightly thick consistency
-Add now add drumsticks turn on the flame and cook till one whistle, turn of the flame release the steam little at a time (we don’t want drumsticks over cooked)
-Open the lid set aside

SEASONING
-1 tsp mustard seeds
-1/2 small onion chopped
-1/2 tsp cumin seeds
-2 tbsp oil, 1 tbsp butter
-2 garlic crushed
-1 spring curry leaves

-Heat oil add mustard seeds allow to pop,
-add onion, garlic stir until they are slightly browned
-Add curry leaves add cumin seeds sauté for a second
-Pour Tadka/seasoning over the dal
-garnish with coriander leaves
-Serve this this toor dal with steamed rice companied by a side vegetable dish/non-veg dish, fired fish, sukka chicken with some papad
-Enjoy!!!

EGGS WITH BAKED BEANS & CRISPY HASH BROWNS

3 eggs
-Dash black pepper, salt, oregano
-2 tbsp milk
-1 small cube butter
-Whisk well
-Non-stick pan lower the heat add olive oil, butter (butter should not be brown)
-Pour in the egg mixture & stir gently while moving the pan with the other hand until you have a liquid scrambled egg
Push the omelette towards the other end by tilting the pan away from you carefully fold the eggs find a plate & roll the omelette on it
-SIDES

HASH BROWN POTATOES
-1 Big boiled potato
-dash salt, pepper, oregano
-1 tsp olive oil, small cube butter

-Grate boiled potato, sprinkle salt, black pepper, oregano give a gentle mix (do not mash), make lemon size
-Heat non-stick pan lower the heat, add olive oil, spread lemon size mixed potato in a layer
-Now add butter this will help the hash brown crisp up let it cook distribution for 2 minutes
-Peak underneath to see if they are browning up well & when one side has fried to golden brown flip the potatoes to the other side-once done add to serving plate

BAKED BEAND WITH TOMATO SAUCE
-5 tbsp spoon baked beans
-Sprinkle chilli flakes
-microwave for 1 seconds
Serve with Toast

MASALA TEA
-Servings-2

-3 cups of water
-3 small teaspoons Red Label natural care tea powder
-6 small tsp sugar
-5 lemon grass leaves, 1 stem crushed
-Boil with 5 minutes until aroma releases.
-Strain add milk as required (string tea or extra milky)

    In Mangalore, pregnant women are given Menthe da Ganji when they’re pregnant. I’m sure you know about it. 🙂 It helps a lot especially in the Bombay weather. It’s easy to make and delicious. Do try it out. 🙂

    Hi Aunty Jen. Your vlogs are always fun to watch. 🙂 10:26 – I noticed that you soaked the dal for 30 mins and I don’t know if you discarded that water and added fresh water before cooking it. If you aren’t using fresh water, please do.

    Things like dals, oats, almonds etc contain phytic acid which can cause bloating, gas and reduce the absorption of iron and minerals.

    It’s best to soak the dal, discard the water and then use fresh water to cook it. With almonds and walnuts, slow roasting them can also get rid of the phytic acid but soaking is the best way.
